Asparagus Subzi
Asparagus Subzi (similar to a stir fry) with a strawberry raita- a delicious yogurt-based strawberry sauce, puri fry bread, roasted radishes, and Dal Makhani.

Spring Menu Ingredients:
Asparagus Subzi
1 pound asparagus chopped to 1 inch lengths
1 TB neutral oil-vegetable
1 t cumin seed
1 green chili
1 t grated garlic
1 t grated ginger
1 cup diced red onion
1 cup tomato finely chopped
1 t coriander powder
1 t kashmiri chili powder
½ t fennel seed powder
½ t Amchur (mango) powder
Strawberry Raita
1 ½ cups yogurt
¾ cup chopped strawberries
1 yellow onion finely chopped
1 green chili (jalapeno) finely chopped
2 T sugar
2 t cumin powder
1 t black pepper
Salt to taste
Handful chopped fresh cilantro
Puri fry bread
1 cup whole wheat flour
¾ t semolina flour
1 t olive oil
¼ cup water
pinch salt
Dal Makhani
1 cup urad (black lentils) dal
½ cup kidney beans
5 cups water
½ cup chopped red onion
1 green chili (jalapeno)
2 t garlic paste
2 t ginger paste
2 large tomatoes finely chopped
½ t cumin seed
3 green cardamom pods
1 black cardamom pod
1 inch cinnamon stick
1 bay leaf
½ t kashmiri chili powder
2 pinches nutmeg

3 T butter
